Low Carb "Potato" Salad

If you are trying to cut the carbs but have a craving for potato salad, check out this recipe I found!

It is made with cauliflower instead of potatoes. Make sure you chop the cauliflower small and cook until it is tender. I use a “paleo” type mayo like the ones from Primal Kitchen foods.

For those in my online FAT Loss program, this is a great low carb day recipe.

Goji Berry Cauliflower Crust Pizza

Check out this recipe from @califlourfoods next time you are in the mood for something sweet or you need to bring a dessert to a get together.

📍I always recommend to my clients that when you are going to a pitch-in, to always bring something healthy and something you would enjoy eating as your contribution. 
This Goji Berry Pizza with cauliflower crust, fits the bill! ✅
You can use any cauliflower crust... BUT GUYS, @califlourfoods crusts are THE BEST! 💯


Prepare your pizza crust as instructed on the box. (I bake on a cookie sheet on parchment paper and flip half way through) Remove from the oven and let it rest for 10 minutes minimum.
Spread 1/4 c unsweetened almond butter other the top of the crust. Top with goji berries, dried blueberries (or your favorite dried fruit) and unsweetened coconut flakes. Drizzle honey over the top and finish with a sprinkle of cinnamon and ENJOY!!

Check out this cauliflower crust "Taco" pizza I threw together the other day!
I used the Jalapeno Crust from @califlourfoods and baked it on either side for 6 minutes.
I put 2 T of @traderjoes salsa on first, then put 1 cup of shredded lettuce on top. I added leftover taco meat and a dollop of guacamole on top! (You can add any of your favorite taco toppings)
So simple and I got to use my leftover taco meat in a completely different way!

You can use left over rotisserie chicken or slow cook the chicken breasts during the day and throw it together in the evening.
