I am a huge fan of Zucchini! Zucchini boats, Zucchini noodles, Zucchini lasagna, and now this recipe from @skinnytaste puts a new spin on zucchini. 
Zucchini Chicken Enchilada Roll Ups are a great low carb alternative for enchiladas. 
You can use left over rotisserie chicken or slow cook the chicken breasts during the day and throw it together in the evening.
I avoid diary so I just omit the cheese and it is still delish!

This recipe uses steel cut oats which are minimally processed, they contain more fiber, have a low glycemic index, are naturally gluten free, are high in protein, and a good source of protein. They are one of the healthiest grains you can eat! Note: they take longer to cook. They are great for meal prep to make ahead and refrigerate (just leave out the fruit and milk to add later)
